The Ultimate Comfort Dish

Aloo Gobi, which translates to potatoes and cauliflower in Hindi is a simple, vegetarian, and comforting classic Indian dish made with cauliflower, potatoes, spices and herbs. It’s a one pan, super easy-to-make dish that you’ll want to eat multiple times a week. Serve with warm basmati rice, naan or roti. This recipe from Maa truly hits the spot. INGREDIENTS: 
  • 2 Large Russet or Yukon Gold Potatoes cubed and peeled
  • 1 Chopped Cauliflower Head
  • 1 Diced White Onion
  • 1 Diced roma tomato (optional)
  • 1/2tsp Cumin Seeds
  • 1tbsp Grated Ginger
  • 1tbsp Minced Garlic
  • 2 Lemons
  • 1 Diced Serrano Green Chili (if you don't like spice, don't add)
  • 2tbsp Avocado Oil or 1tsp Ghee
  • S&P
  • 3tbsp Everyday Spice Mix 

DIRECTIONS: 

  • Heat pan with oil or ghee and saute 1/2 tsp cumin seeds on low heat
  • Once the cumin seeds begin to crackle, add 1 tbsp fresh ginger and garlic and saute for 30 seconds
  • Add diced onion, tomato and green chili and saute until onion is transparent
  • Add cubed potatoes into the pan and stir fry on medium heat for 2 to 4 minutes, then add 1/2 cup of water, cover with lid and cook until potatoes are fork-tender
  • Once potatoes are fork-tender add chopped cauliflower and stir fry for 3 minutes then add 3 tbsp of Everyday Spice mix and the juice of one lemon and stir
  • Cover pan until potatoes and cauliflower are fully cooked on low-medium heat, about 15-20 minutes add salt and pepper and more Everyday spice to taste
  • Garnish with fresh cilantro, more lemon juice and serve hot with rice, naan or roti 

TIPS

  • Soak cubed potatoes and cauliflower in separate bowls of salt water for at least 30 minutes before cooking to remove starch and to get crispier potatoes and cauliflower
  • If you like more spice add 1/2 tsbp of paprika, cayenne pepper or red chili powder when adding the Everyday Spice mix
