Summer Corn Salad
Serves: 4 | Prep Time: 15 Min | Cook Time: 15 Min
INGREDIENTS:
- 4 ears of fresh corn
- 1 bell pepper diced
- 1/2 red onion finely chopped
- 1/4 cup fresh cilantro chopped
- Juice of 2 limes
- 1 cup Cotija Cheese
- 1 Avocado (optiona
- 1-2 tbsp Droosh Chaat Party
- 1/2-1 cup Brightland Olive Oil
- 1 tsp Seed Ranch Flavor NashSeoul
- Salt and pepper to taste
DIRECTIONS:
- Preheat grill to medium-high heat
- Place the ears of corn directly on the grill and cook, turning occasionally, until charred and tender, about 10-12 minutes
- Remove corn from the grill and let cool slightly
- Once cooled, carefully cut the kernels off the cob with a knife and place them in a large mixing bowl
- Add diced red bell pepper, chopped red onion, diced avocado and fresh chopped cilantro to the bowl with the corn and sprinkle 1tbsp Chaat Party and mix all together
- In a small bowl, whisk together lime juice, olive oil, 1tsp Chaat Party and black pepper
- Pour the dressing over the corn mixture and toss until well combined
- Taste and adjust seasoning if needed
- Serve immediately or refrigerate until ready to serve
- Once ready to serve, add cotija cheese, a pinch of Chaat Party and few drizzles of NashSeoul hot sauce to your liking
