Grilled Corn Salad

Summer Corn Salad

Serves: 4 | Prep Time: 15 Min | Cook Time: 15 Min

 

INGREDIENTS: 

 

DIRECTIONS: 

  • Preheat grill to medium-high heat
  • Place the ears of corn directly on the grill and cook, turning occasionally, until charred and tender, about 10-12 minutes
  • Remove corn from the grill and let cool slightly
  • Once cooled, carefully cut the kernels off the cob with a knife and place them in a large mixing bowl
  • Add diced red bell pepper, chopped red onion, diced avocado and fresh chopped cilantro to the bowl with the corn and sprinkle 1tbsp Chaat Party and mix all together
  • In a small bowl, whisk together lime juice, olive oil, 1tsp Chaat Party and black pepper
  • Pour the dressing over the corn mixture and toss until well combined
  • Taste and adjust seasoning if needed
  • Serve immediately or refrigerate until ready to serve
  • Once ready to serve, add cotija cheese, a pinch of Chaat Party and few drizzles of NashSeoul hot sauce to your liking
