Icon Shrimp Curry

Icon Shrimp Masala 

This iconic shrimp curry uses mini shrimps cooked in our go-to Icon sauce sauce made with onions and tomatoes, along with aromatics such as ginger, garlic, and the Icon spice. This takes 30 minutes to make and is a crowd-pleaser. Depending on how spicy you like curry, you can add more or less Icon spice. If you prefer a curry that’s more saucy, we recommend blending the sauce in a blender before adding back to the pan and cooking the shrimp. Enjoy with naan or rice!

INGREDIENTS: 
  • 1 tbsp ghee or butter
  • 2 large roma tomatoes finely chopped
  • 1 small white or red onion finely chopped
  • 1tbsp grated garlic (garlic paste is also fine)
  • 6-8 cloves grated or minced ginger (ginger paste is also fine)
  • 1 serrano chili finely chopped
  • 1-2 bay leaves
  • Water
  • 1 cinnamon stick 
  • 1/4 tsp cumin seeds 
  • 1/4 tsp mustards seeds 
  • 1 lemon
  • 1/2 cup Cilantro chopped
  • S&P
  • 2tbsp Icon Spice Mix

DIRECTIONS: 

  • Defrost shrimp if frozen per package instructions or peel and devein raw shrimp, if not peeled or deveined already
  • Marinate the shrimp with salt, ginger, lemon juice and 1/2 tbsp Icon Spice mix for at least 15-20 minutes
  • Chop tomatoes finely and set aside (you can use a food processor for this if you have one)
  • Heat pan with ghee on medium/low heat and saute cumin and mustard seeds for 1-2 minutes
  • Add chopped onion, green chili, ginger, cinnamon stick and bay leaves and saute for 6 minutes, then add tomatoes and 1tbsp Icon mix, salt to taste, and saute for another 6-8 minutes
  • Add 1/2 cup water to the pan so the mixture doesn't dry out
  • Lower the heat and let the mixture simmer for 5 minutes, stirring occasionally
  • Add the shrimps and the juice of half a lemon and salt to taste to the pan
  • Let shrimps cook on the pan, stirring occasionally until shrimps curl up and turn pink (about 3 minutes)
  • Turn stove off, add another teaspoon of Icon mix, lemon juice and salt and pepper to your liking
  • Garnish with cilantro if you're not a hater and serve warm with rice, naan or add in your favorite salad or bowl

 

TIPS

  • If you don't have cinnamon sticks, mustard or cumin seeds that's okay and this is still delish without- but we recommend you get yourself these ingredients to have on hand!
  • We recommend getting fresh peeled and deveined shrimps from your local seafood counter
