Icon Vodka Pasta

Indian-inspired Vodka Pasta

This dish combines the unique flavors of The Icon blend with a creamy tomato sauce. The vodka adds a subtle kick to the sauce, while Droosh gives it a distinct Indian twist. The result is a harmonious blend of rich, creamy, and slightly spicy flavors that make this Icon vodka pasta a meal to remember!

INGREDIENTS:

  • 8 oz or 1 bag rigatoni or pasta of choice
  • ¼ red onion small diced or 3 shallots minced
  • 4 cloves garlic minced
  • ¼ cup tomato paste
  • ½ cup heavy cream
  • 2 tsbp vodka
  • Fresh basil leaves; about 6 lightly chopped for garnish
  • 1 tsp red pepper flakes
  • 2-4 tbsp The Icon spice 
  • 1 tbsp butter
  • 1 cup frozen peas thawed (optional)
  • ½ cup freshly grated Parmesan cheese
  • S&P to taste

DIRECTIONS:

  • In a large skillet over medium heat, melt butter and add shallot and garlic and cook, stirring frequently, until softened, 4 to 5 minutes
  • Add tomato paste, 1tbsp icon spice, red pepper flakes and cook, stirring frequently, until paste has coated shallots and garlic and is beginning to darken, 5 minutes
  • Add vodka to pot and stir to incorporate, scraping up any browned bits from the bottom of the pot then turn off heat
  • Bring a large pot of salted water to a boil and cook pasta according to package instructions and cook until al dente. Reserve 2 cups of pasta water before draining
  • Return sauce to medium heat and add 1/4 cup of pasta water, heavy cream, and 3 tbsp Icon mix, stirring to combine.
  • Add half the Parmesan and stir until melted. Turn off heat and stir in cooked pasta. Fold in remaining Parmesan, adding more pasta water (about a tablespoon at a time) if the sauce is looking dry. If using peas, add in at this point and combine with pasta/sauce
  • Season with s&p and more Droosh Icon Blend (if needed)
  • Garnish with fresh Parmesan and basil leaves
