Green Chutney Chicken

INGREDIENTS:
For the green chutney sauce
- 2 bunches of cilantro, leave stems on
- About 3-5 mint leaves (optional)
- Juice of 1 Lemon
- 2 Garlic Cloves (add more if you LOVE garlic)
- 1 inch Fresh Ginger (about 1 teaspoon)
- 1 Serrano Chili (If you don't like spice only add 1/2 of one)
- 1tsp Chaat Party Spice Mix
- 1tsp salt
- 1 tbsp water (optional depending on desired consistency)
- 1 cup plain Greek yogurt
For the chicken
- 2 lb boneless, skinless chicken breast cubed
- 1 small white onion diced
- 1/2 a lemon
- Salt & Pepper to taste
- 2 tbsp The Icon spice
- 2-3 tbsp plain yogurt
- 1/2 tsp cumin seeds
- 1.5 tbsp ginger garlic paste

1/2 cup cashew nuts soaked and blended
DIRECTIONS:
- Make green chutney sauce by combining all ingredients in a blender and blend until the mixture is thoroughly combined; add water if needed to keep the mixture moving
- Once blended set aside (you can also make this ahead of time and keep in the fridge in a glass jar)
- Chop chicken breast in medium sized cubes
- Add chicken to a bowl and marinate chicken with salt to your liking, 1 tbsp ginger garlic paste, 2 tbsp The Icon spice, juice of half a lemon and 2-3 tbsp plain yogurt for at least 1 hour
- While chicken is marinating soak 1/2 cup cashews in water for at least 30 minutes and then make a paste by blending with 2 tbsp of yogurt and then set aside (add water if needed)
- In a pan, heat oil or ghee and 1/2 tbsp ginger garlic paste and stir on medium heat
- Add diced onions and sautée until they soften about 5 minutes
- Add cumin seeds and stir (optional)
- Next add the marinated chicken and cashew paste and sautée for a few minutes
- Add the green chutney sauce and stir so chicken is nicely coated
- On medium heat sautée until chicken is fully cooked
- Add a squeeze of lemon juice
- Taste test by adding more salt, lemon juice, The Icon spice or Chaat Party
- Serve with basmati rice, naan or roti
