Pav Bhaji (Spicy Potato Sandwich)

Pav Bhaji Comfort Sandwiches

Pav bhaji is a popular street food in India that features a spicy vegetable mash, known as bhaji, served between two buttery and toasted buns, known as pav. The bhaji is made with a blend of mashed vegetables such as potatoes, peas, and tomatoes, along with a variety of aromatic spices. Droosh’s spin on the Pav bhaji sandwich is a tasty and satisfying snack that can be enjoyed anytime of the day and as you can tell we love them poolside!

INGREDIENTS: 

  • 1 Large white onion diced
  • 2 Serrano chilis diced
  • 1 Roma tomato chopped
  • One 14 oz can diced tomato
  • 4 cloves chopped garlic diced
  • 4 oz frozen peas
  • 1 Bell pepper diced
  • 3 Potatoes peeled and boiled
  • 1 1/2 cup water
  • 1tbsp ghee or avocado oil
  • 1 Lime
  • 1 Package buns like Hawaiian buns
  • Butter for the buns
  • 1/2 cup of fresh chopped cilantro for garnish
  • 1tbsp Chaat Party Spice
  • 1 tbsp Icon Spice

DIRECTIONS:

  • Boil potatoes, bell pepper and peas with a pinch of salt until it is cooked and set aside (about 20 minutes)
  • In a pan heat oil or ghee, onion, 2 cloves garlic, serrano pepper and salt until onions are cooked, then add the boiled bell pepper, peas, 2 more cloves of garlic, fresh tomatoes or canned tomatoes (with all the water)
  • While the above is cooking, chop potatoes and then add to the pan with The Icon and Chaat Party mix, cover and cook for about 10 minutes
  • With a masher or a fork, start mashing the potatoes until they are softer, almost like a mashed potato but still has chunks in it
  • Add about 1.5 cups water to the pan and bring to a boil so the mixture doesn't dry out
  • Taste test
  • Add more salt, pepper, Icon or Chaat Party spice to your liking and mix
  • Cook 5 longer on low heat
  • Add lime or lemon juice and cilantro, stir and enjoy on it's own or on toasted and buttered buns 

 

TIP

  • You can peel your potatoes after boiling or before! If doing after, it's much easier but just make sure they have cooled down so you don't burn yourself. 
  • You can add additional veggies like spinach and carrots for extra veg in the mixture!
