Poha (Savory Rice and Veggies)
Poha is a popular Indian breakfast dish made from flattened rice, typically cooked with spices, vegetables, roasted peanuts and fresh herbs. It is known for its light and fluffy texture, offering a flavorful and satisfying start to the day. It's a favorite of Serena, Savi and Sabrina's they grew up eating and still love.

INGREDIENTS:
- 2 cups flattened rice (poha)
- 2 tablespoons oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 cup chopped white or red onion
- 1-2 green chilies, chopped
- 1 cup boiled and diced potatoes
- 1/4 cup roasted peanuts
- 1 tbsp Chaat Party
- Salt to taste
- Juice of 1-2 Lemons
- Fresh cilantro chopped for garnish
- Spiced yogurt for serving
Adjust the spice levels and quantities according to your preference!
DIRECTIONS:
- Start by rinsing 2 cups flattened rice under cold water and letting it soak for 10 minutes, then strain
- While poha is straining boil 1 potato and peel and chop into small cubes
- In a pan or wok, heat 2 tablespoons of oil, add the mustard seeds, cumin seeds, chopped onions, potatoes and green chilies
- Once the onions are golden brown, add Chaat Party, turmeric, salt, and the soaked flattened rice
- Mix well and cook for a few minutes until the poha is heated through and potatoes are cooked
- Start by adding the juice of 1/2 a lemon and add more to your liking
- Taste for seasoning and add more salt or Chaat Party to your liking
- Garnish with fresh coriander leaves and serve hot.
