Sabudana Khichdi
Sabudana Khichdi is a delightful and flavorful Indian dish made primarily with tapioca pearls, also known as sabudana, along with potatoes, curry leaves, peanuts, and spices. Here's a recipe description to guide you through creating this delicious dish.

INGREDIENTS:
- 1 cup sabudana (also known as tapioca pearls)
- 1 cup water for soaking
- 2 tablespoons ghee or oil
- 1 tablespoon cumin seeds
- 2 green chilies minced
- 10 curry leaves (if you don't have them that's fine)
- 1 small onion diced
- 1 medium potato peeled and thinly sliced into 1-inch squares
- ⅓ cup roasted peanuts
- 1½ teaspoons salt
- 2 teaspoons sugar
- Juice of 1/2 lemon
- Cilantro finely chopped for garnish
- 2 tablespoons Droosh Chaat Party spice
INSTRUCTIONS:
- Rinse sabudana and drain out all the water
- Add water to the bowl and soak sabudana for 4 to 6 hours
- Heat ghee or oil in a nonstick pan and add cumin seeds and allow them to sizzle
- Lower the heat and add curry leaves, green chilies, onion, potatoes, 1tbsp Chaat Party, 1tsp salt and mix well
- Cook covered for 3 to 4 minutes

Add soaked sabudana, peanuts, remaining salt and 1/2-1 tbsp Chaat Party; mix well and cook covered for 5 minutes or until the sabudana is cooked soft and most pearls will have turned translucent

Add sugar, lemon juice, cilantro and more Chaat Party or salt if needed
