The Perfect Lunch, Snack or Just in the Mood to Eat Dish
Droosh’s version of a classic Bombay Sandwich. The Bombay sandwich is iconic for many reasons as it’s an ode to the city of Bombay’s hustle and on-the-go culture and made with ingredients that are cheap, filling and beyond satisfying. This 5-minute sandwich is made with homemade (or store-bought) green chutney, butter, potatoes, tomatoes, cucumbers, cream cheese, onions and of course Chaat Party. You can tweak this sandwich to your taste by adding or removing any ingredients. This is delicious either toasted or not.

INGREDIENTS:
- 4 Slices Bread of Choice (we love sourdough, Dave's Killer Bread or any classic white bread)
- 1 Ripe Tomato Sliced
- 1 Small Persian Cucumber or About 1/5th of a Large Cucumber Sliced
- 1/2 cup Red Onion Sliced (Optional)
- 2 tsbp Cream Cheese or Vegan Cream Cheese of choice
- 1 Russet potato boiled and mashed (optional)
- 3 tbsp green chutney
- 2tbsp Chaat Party Spice Mix
DIRECTIONS:
- If toasting, toast bread slices in pan with oil or in a toaster
- Boil and mash potatoes and set aside in a bowl and add salt and pepper to taste- will take about 10 minutes to boil and mash
- Assemble sandwiches
- Spread cream cheese onto one slice of bread or both if you want extra cheese
- Spread green chutney on the other slice of bread
- Add thinly sliced cucumbers, tomatoes and onions on top of cream cheese
- Add 1 tbsp of The Chaat Party Spice Mix per sandwich
- Add mashed potatoes and another sprinkle of Chaat Party Spice
- Top with other bread piece, slice in half and enjoy
