Pesto Mushroom and Leak Toast
SERVINGS: 6 | PREP TIME: 10 MIN | COOK TIME: 15 MIN
INGREDIENTS:
- 1 cup finely chopped leeks (medium size)
- 1 cup mushrooms of choice rinsed and chopped finely
- 1 jar pesto for spreading on the bread
- 4 garlic cloves
- Bread slices of choice- we recommend sourdough
- 2-3 tsp Droosh Everyday Spice
- 1 lemon
- Basil for garnish
- Salt and Pepper, to taste
DIRECTIONS:
- Finely chop all ingredients and set aside
- Heat a pan with oil and let it get hot
- Add finely chopped mushrooms, season with salt and pepper and sautee for about 5 minutes until soft then set aside in a bowl
- In the same pan, add a little more oil and the finely chopped leeks and minced garlic
- Add 2 tsp of Everyday spice and mix
- Add salt and pepper to your liking and sautee on medium-low heat until leeks start to brown and become soft and caramelized, about 8 minutes
- Add a splash of water if the pan is starting to dry out
- Toast your sliced bread while the leeks are cooking in a toaster or the oven (broil in the oven for a few minutes)
- Taste test and adjust seasonings to your liking by adding more Everyday spice, salt and pepper
- Once done cooking, add the mushrooms to the pan and squeeze the juice of half a lemon and give it a good mix
- Arrange bread slices on a plate, spread the pesto on each bread slice and the leek mushroom mix
- Garnish with more everyday spice and chopped basil leaves
- Enjoy as an appetizer, snack or a light lunch
