PANEER AND BELL PEPPERS

Paneer Jalfrezi is a popular Indian dish made with paneer (a type of Indian cheese), vegetables, and spices. "Jalfrezi" refers to a style of cooking in which the ingredients are stir-fried in oil and spices. The dish typically includes onions, bell peppers, tomatoes, and various spices such as cumin, coriander, turmeric, and chili powder. It's known for its vibrant colors, spicy flavor, and delicious taste.

INGREDIENTS: 

  • 1 Package paneer
  • 1 tbsp Ghee or oil 
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 small red or white onion chopped
  • 1-2 tsp garlic, ginger paste
  • 1/2 roma tomato chopped
  • 1 green chili diced
  • 2 cups bell peppers sliced
  • 2-3 tbsp Droosh Icon Spice
  • 1/4 tsp Turmeric for color
  • 1/2 cup plain green yogurt or coconut milk
  • Cilantro for garnish
  • Salt to taste

DIRECTIONS: 

  • Slice onion, bell peppers and dice green chili and set aside
  • Heat a pan with oil or ghee on medium-low heat and add mustard and cumin seeds and sauté for 2 minutes 
  • Add the bell peppers and onion and cook for a few minutes until they begin to soften 
  • Add in chopped tomatoes, diced green chili and 1tbsp of the Icon Spice and stir
  • Next, add the ginger, garlic paste (if you don't have a paste then add minced garlic and ginger or frozen cubes) and stir again
  • While veggies cook down chop paneer into cubes then add to the pan and mix in with another 1tbsp of Icon Spice
  • Add in 1/2 cup Greek Yogurt and stir so everything is coated, trying to not break up the paneer too much
  • Add a splash of water 
  • Cook for another 5 minutes
  • Taste test and adjust seasonings as needed by adding in more salt or Icon spice
  • Garnish with cilantro
  • Enjoy on its own, on bread, with rice or roti
