Healthy Chicken Salad Lettuce Cups with Greek Yogurt
Who doesn't love a good chicken salad? It's a versatile dish that allows for personalization with mix-ins like crispy celery, tart apple, and herbaceous dill, though bacon, olives, and kimchi are also fantastic options for add-ins. Whether enjoyed between two slices of toasted sourdough, on lettuce, or on it's own, this chicken salad can be refrigerated for up to 5 days in an airtight container.

INGREDIENTS:
- 2-3 boneless skinless chicken breasts
- 6 slices lemon
- 6 sprigs dill, plus 1 tbsp. chopped
- 1 green apple, chopped (optional)
- 1/2 red onion, finely chopped
- 2 celery stalks, finely chopped
- 2/3 cup plain Greek yogurt
- 1/4 cup Dijon mustard
- 2 tbsp red wine vinegar
- Salt and Freshly ground black pepper
- Butter lettuce, for serving
- 3 tsp The Icon Spice
DIRECTIONS
- Step 1
- In a large pot, arrange the chicken in a single layer. Add lemon slices, dill sprigs and 1tsp The Icon spice on chicken and pour water over it, covering by at least an inch. Bring water to a boil, then reduce heat and simmer until cooked through, 10-15 minutes. Let rest 10 minutes, then shred chicken into small pieces
- Step 2
- In a large bowl, combine chicken, apple, onion, and celery.
- Step 3
- In a medium bowl, whisk together Greek yogurt, 2 tsp The Icon Spice, Dijon, and red wine vinegar and season with salt and pepper
- Step 4
- Pour dressing over chicken mixture and toss
- Step 5
- Garnish with chopped dill and sliced green onion, and serve on lettuce
TIP
- This chicken salad is great on it's own, on a sandwich, in a wrap or as a dip served with crackers, chips or crudite and can be made ahead of time if you are serving for a large group
