Healthy Salmon and Chickpea Noodle Bowl
An easy and healthy salmon noodle bowl you can put together in 20 minutes! Aromatic, perfectly spiced, healthy and filling- this bowl will not disappoint and The Icon spice just makes it all the easier to prepare!

INGREDIENTS:
- 2 Salmon Filets
- 1-2 packages noodles of choice
- 2 limes
- 1 tsp red curry paste
- 2 tsp soy sauce
- 1/2 bag spinach
- 1 small onion diced
- 1-2 cups mushrooms rinsed and chopped
- 1/2 green chili diced
- 1 28oz can crushed tomatoes or plain tomato sauce
- 2 garlic cloves minced
- 1 inch ginger minced
- 1/2 can coconut milk of choice
- 1/2 can chickpeas rinsed and drained
- Green Onion for garnish
- Cilantro for garnish
DIRECTIONS:
- Season salmon filets with 2-3 tsp The Icon spice, salt and pepper
- Preheat oven or air fryer to 400 degrees F and cook salmon for 15-20 minutes
- While salmon is cooking chop your veggies
- Heat a pot on low-medium heat with oil and sauté onion and mushrooms for 5 minutes
- Add garlic, ginger, green chili and mix in
- Add red curry paste and stir in
- Add Icon spice- however much you like- start with 1 tbsp and add more based off how much spice and flavor you like
- Stir and then pour in tomatoes and let boil
- Once boiled, turn heat to low and add in your noodles- cook to package instructions
- Add more water so noodles are covered
- Once noodles are cooked add in 1/2 can of coconut milk, 2 tsp soy sauce, juice of 2 limes, chickpeas and spinach; stir
- Prep your bowls!
- Pour noodle / curry into a deep bowl and add in your salmon filet then garnish with cilantro, green onion and more Icon Spice
