INGREDIENTS:
- 1 lb shrimp, deveined
- ¼ cup avocado oil
- 2 tbsp Icon Spice Mix
- 1/4 cup lemon juice
- Salt, to taste
- Tomato, sliced
- Avocado, sliced
- Cucumber, thinly sliced
- Pita/wrap of choice
- Serrano chilis, optional
- Cilantro, optional
DIRECTIONS:
- Season the shrimp: In a large bowl, toss the shrimp with avocado oil. Add Icon Spice Mix and evenly coat the shrimp. Finish with lemon juice and give it a good stir. Let it sit for 5 minutes to marinate.
- Heat a large saucepan over medium heat. Add the shrimp and marinade to the saucepan. Cook for about 1 minute on each side until the shrimp are cooked through. Remove from heat and set aside.
- Assemble the lettuce wraps: Take your pita or wrap of choice and add sliced tomatoes, avocado, and cucumber. Top it off with the cooked shrimp. For an extra kick, add some sliced serrano pepper and cilantro if desired.
